Italian Crab Scramble

INGREDIENTS:
| 1 pkg. | (8 oz.) Louis Kemp Crab Delights® |
| 8 | large eggs |
| 1 tbsp. | water |
| 2 tsp. | Olive Oil |
| salt & pepper to taste | |
| 1/2 tsp. | dried basil leaves (or 1 tbsp. chopped fresh basil) |
| 1/2 tsp. | dried oregano leaves |
| 1 cup | packed, torn fresh spinach leaves |
| 1/4 cup | chopped roasted peppers |
| 1/2 cup | grated Italian 6-cheese blend or grated mozzarella |
In a large bowl whisk eggs and water together until frothy.
In a large nonstick pan, heat olive oil until very hot; add egg mixture; season with salt & pepper. With a heat-resistant spatula scrape eggs to the center after they have set. When eggs are half cooked, add Crab Delights, herbs, spinach, roasted peppers and cheese blend. Continue scrambling until eggs are set & spinach is just wilted. Serve immediately.
