Lobster Quesadillas with Mango Salsa

SALSA:
| 1 | mango, peeled, seeded and chopped |
| 3 tbsp. | chopped red onion |
| 1 | jalapeño chile, seeded and minced |
| 1 tbsp. | lime juice |
QUESADILLA:
| 1 pkg. | (6 oz. or 8 oz.) Louis Kemp Lobster Delights® |
| 3 tbsp. | chopped cilantro |
| 4 | 10-inch flour tortillas |
| 2 cups | shredded jack cheese |
For salsa, mix first 4 ingredients and set aside. Next, toss lobster with cilantro and cheese and scatter over 2 tortillas. Cover each with another tortilla. Heat in skillet until cheese melts, turning once. Cut into wedges. Serve with salsa.
