Lobster Quesadillas with Mango Salsa

Ingredients

Salsa:
1 mango, peeled, seeded and chopped
3 tbsp. Chopped red onion
1 jalapeno chile, seeded and minced
1 tbsp. Lime juice

Quesadilla:
1 pkg. (6 oz or 8 oz) Louis Kemp Lobster Delights
3 tbsp. Chopped cilantro
4 10-inch flour tortillas
2 cup shredded jack cheese

Instructions
For salsa, mix first 4 ingredients. Next, toss lobster with cilantro and cheese and scatter over 2 tortillas. Cover each with another tortilla. Heat in skillet until cheese melts, turning once. Cut into wedges. Serve with salsa.
