Radicchio Cup Lobster Salad

INGREDIENTS:
| 1/2 cup | finely diced carrots |
| 1/2 cup | finely diced celery |
| 1/4 cup | sweet pickle relish |
| 2 pkgs. | (8 oz. each) Louis Kemp Lobster Delights®, Salad Style |
| 6 tbsp. | mayonnaise |
| 3 oz. | red wine vinegar |
| salt and pepper to taste | |
| 1 head | radicchio |
| 2-3 | green onions, sliced thin |
In a large bowl, combine carrots, celery and relish. Shred two packages of Lobster Delights and combine into bowl with previous ingredients. Add mayonnaise, red wine vinegar, salt and pepper to mixture (may refrigerate for up to 24 hours).
Carefully remove leaves from head of radicchio and use 3 large leaves (or 4 smaller leaves) to form a cup. Place cup in the center of a shallow bowl and fill with chilled Lobster Delight mixture. Sprinkle top with sliced green onions. Serve immediately.
